Planning To Make Freezer Meals In Preparation For The Baby

I think I am in bloggy love. I have been thinking about making freezer meals during September and October, but beyond this desire to make these preparations? I’m clueless.  Winging it in the kitchen for me isn’t only impossible, it could be dangerous. I like very descriptive, very detailed directions, and then hold my breath that it comes out half right.

Sooo.. back to being in bloggy love… I found this blog that looks to be pretty amazing.  {Understand that I am easily awed by anyone that appears to know what they are doing in the kitchen, heehee.}  Make Ahead Meals For Busy Moms.  And by “busy” I am interpreting that to mean, solely for my own benefit, does not want to spend a whole lotta time in the kitchen

So, the first recipe I came across on her blog was Stuffed Shells and Rotisserie Chicken. I ate dinner like 5 minutes ago and I would love to have some of that. Right. Now. However, I’m not really crazy about Ricotti cheese. Would it be completely wrong if I didn’t stuff the shells with it? And she suggests the disposable aluminum baking tins for this one, but I was hoping to use large freezer Ziplock bags for the meals to fit as many as possible in the freezer.  Could I save the sprinkling of Parmesan cheese on top for when I transfer it to a pan to bake and just freeze it in a Ziplock?  Also, since it says serves 8-9 and hubs doesn’t like spinach, this should stretch to about three meals.  Score

OK, truth is, I am a little fickle. As I browsed her blog, there ws some pretty decent stuff, but a couple or so pages in I really wasn’t finding that many freezer / make-ahead meals.  I’m sure I will as I keep looking, but I am now onto explore other blogs and sites for ideas. In and out of bloggy love that fast….

Using a silicone 9×9 pan would be a great way to pop things out easily and make them stack up nicely.
